The country’s only urban farm brewery is right here in Cincinnati

For Betty and Bob Bollas, their local brewery and urban farm is about more than just creating a space where people can get a good drink. It’s also about supporting causes that are bigger than themselves and making a lasting impact on the community. The Bollases are the founders of Fibonacci Brewing Company, a brewery and urban farm with on-site Airbnbs. 

“The Fibonacci [Sequence] numbers create a mathematical equation found throughout nature,” says Betty. “We focus on using local ingredients in the majority of our products that we grow, forage or purchase from local farms or companies.”

The drinks at Fibonacci Brewing Company are made with those local ingredients.

“A popular example is Horapha, which is a cream ale with lemon, honey and Thai basil,” says Betty. 

Fibonacci Brewing Company allows visitors to not only enjoy the drinks they produce, but to spend the night with them as well.

“We are the only urban farm brewery in the country,” says Betty. “We have a variety of chickens and three dwarf Nigerian goats named Fiddlehead, Honey and Buttercup. We have a second taproom in the old farmhouse that is located on our property.

“In the upstairs, we have two Airbnb rooms with king-size beds, their own bathrooms and a coffee/tea station. We rent them year-round for $99 a night.”

The brewery’s mission is also to participate in numerous equity and community outreach programs.

Betty says that they’ve worked with organizations like Ellequate, a data-informed employer certification and cohort-based leadership program for intersectional workplace equity.

“We actually became certified through this program,” she adds. 

Fibonacci Brewing Company has participated in the Ask for Lexi bystander training and intervention program through Women Helping Women. The program informs others on how to identify when a customer may be in a potentially dangerous situation. 

The brewery is a participant in the Little Free Library Read in Color program.

“This is a new initiative bringing diverse books to Little Free Library book-sharing boxes around the world,” explains Betty. “

Fibonacci Brewing Company is also committed to reaching those in low-income neighborhoods. In fact, the brewery offers monthly farm markets to assist with the food deserts and food oppression in their own neighborhood in Mt. Healthy.

While it continues to impact the Cincinnati beer scene and social justice campaigns, Fibonacci Brewing Company is also hoping to offer its own food in the New Year.
